Not to toot my own horn or anything, but....
Toot. Toot.

When I cook, I tend to have a vague plan and really just wing it. I got Erik to join Farrell's (yay!) so we are both on the meal plan. I really like diversity in my meals where as Erik could eat broccoli, chicken, and couscous every night. To prevent this from happening I have taken over the cooking. What I threw together was so good! Erik was still raving about it this morning!

Ranch Chicken Veggie Pizza

2 FlatOut Whole Wheat Light wraps
8oz Grilled Chicken
1/2c chopped Brussel Sprouts
1/2c chopped Asparagus
1/4 white Onion
1/4 yellow Pepper
1/2 Ranch flavor powder packet
1/2 single serving container of Plain Greek Yogurt
2Tbs minced Garlic
Salt & Pepper
1Tbs Olive Oil
2Tbs shredded Low Fat Cheese

Chop all the veggies pretty small. Saute in Med. sized pan with 1Tbs Olive Oil. 
Mix the Ranch flavor powder and the Greek Yogurt together then add to the veggie medley.

Put the  2 FlatOut Wraps on a flat top griddle or under the broiler to crisp up both sides. 

Spread half the Ranch veggie medley on each crisp wrap. Chop up 4oz grilled chicken for each wrap. Top each with 1Tbs shredded cheese. Bake each mini pizza at 350 for about 7min or until cheese is melted.
